Its my final week of genius hour! So this is my last blog post. For my finale cupcakes I though I would try something pretty hard. I made cookie dough stuffed cupcakes, which turned out amazing. For my cupcakes I made a vanilla base cupcake which was very light and airy which was good for the denser cookie dough. While those were baking I made my cookie dough which was weird because it had no eggs or baking soda, since it had to be in the cupcakes. Next after the cupcakes had cooled I used a little tool to cut out the center of my cupcake and then stuffed it full of cookie dough and then iced it with buttercream icing and garnished it with chocolate chips. I had a family party that night so I got to serve them there and everyone loved them.

This week I tried my hand at using fondant, which is like play do that you can eat. I made a normal vanilla cupcake with cream cheese icing and then I went in to making the fondant. At first I wanted to try to make a star or something similar to it but I couldn't figure out how to cut a perfect star. I tried to make some other shapes but they didn't really work so then I decided to make little circles using a straw. They came out really good and look even better on the cupcakes. When we went to eat the cupcakes we found out that just because you can eat fondant doesn't mean you should, because it does not taste very good.
So this week I wanted to try mixing icing flavors. I made the same base vanilla cupcakes, then I made my icing like I did in weeks 6 and 7. I made the strawberry icing by mashing up strawberry's and adding flavoring plus a little bit of pink food coloring. Then for the mint icing I took the other half of the icing I made and added some mint extract to it and some blue food coloring to try to give it a mint color. After I had the icings complete I took a cupcake and made lines with icing, one strawberry and one mint. Finally after that I took a tooth pick and swirled the colors together to make a nice pattern.
So this week I had to make cupcakes for my little cousin and she wanted vanilla cupcakes with pink icing so that´s what I made for her. These cupcakes were extremely easy to make. All I had to do was make a base cupcake that was vanilla which is very east to make. It was just the same cupcake that I made in week seven. After that I made cream cheese icing and dyed it pink. So that was my cupcake for this week, not much to it.
This week I found a great carrot cake recipe so I decided to make it. It took a lot of time to prep it but it was worth it. My mentor didn't have to help me at all this week which was awesome. I was really proud since these cupcakes came out really good.
For the base of the cupcake you had to hand grate 2 full cups of carrot which doesn't seem like a lot but it was about 10 carrots. After you got the carrots grated you just added the dry ingredients like flour and sugar etc. Once you got all of that done you just bake the cupcakes. When it was time to make the icing they didn't have a recipe so I just made it without one. When I made it I should have used one stick of butter and two sticks of cream cheese but instead I used two sticks of butter and one stick of cream cheese. This made my icing melt faster but they were still good. So I have backed off making really different bases and really tried to focus in on my icing. For my icing this week I made a mint icing which was pretty easy actually. I used the same base recipe I used last week which turned out just as good the second time as it did the first.
I made my base the same way as last week with a light and airy recipe. Once I had them made and while I was waiting on them to cool I started to make the icing. For my icing I took a normal cream cheese icing and I found this mint flavoring but it was for the cupcake part and not the icing so I was a little scared at how it was going to come out. I took my icing and added just one drop and it flavored it a good amount. It only took 2 drops to flavor all the icing. Finally i dyed it a light blue and iced the cupcakes. This was a crazy week! My mentor was sick all week and could not be there to help me with my cupcakes so I had to make them on my on. So I picked a very easy recipe since I had no guidance. I chose too make a vanilla cupcake with with strawberry icing.
The base of my cupcakes were just vanilla but they were easy to make. They were easier for me to make this time than the last time I think because i am getting used to how to make cupcakes. I really enjoyed making these cupcakes, I did a lot better than I thought I would without a mentor to help me. For my icing I made a cream cheese icing and then I added in strawberries I massed up and I also added some strawberry flavoring. The icing was amazing and it complemented the light and airy cupcake I made. This week I made Mocha cupcakes they turned out perfect. The cupcakes were pretty basic but I wanted to make some easy cupcakes so I could focus on the icing part of the cupcakes. I am happy that my cupcakes turned out good.
I wanted to focus on icing my cupcakes this week because I haven't been good at it. I don't have a steady hand so it makes it hard to ice them. I have gotten better at it through the weeks that we have been doing it. For my icing this week I made bright blue icing with mini pink sprinkles on them. I made the icing look like a swirl then added the pink sprinkles. The cupcake was easy to make because I chose a basic mocha cupcake since I was more worried about the icing. For my cupcakes I started to make a basic cupcake recipe and added coffee and mocha flavoring to taste and once I got the desired taste I baked them. I am so happy with the way my cupcakes turned out, I am excited for next week! Lemon cupcakes were the cupcakes I chose to make this week. They were really good, and relatively simple. All you had to was make a simple vanilla cupcake recipe and add lemon juice and some other lemon ingredients. We were having a chicken stew this weekend so i made the icing look like little ghost since it was Halloween themed.
This recipe was a little difficult because I didn't have a recipe for lemon cupcakes because i couldn't find a good one. So I found a good vanilla cupcake recipe and added stuff like lemon juice and lemon zest, I also made my icing very lemony. Overall I think these cupcakes turned out well since I didn't have a recipe to follow. I cant wait for next week! This week for my third week I decided to make salted caramel mocha cupcakes. They were best cupcakes I have made so far. The cupcakes were extremely complicated to make and very time consuming. Over all the cupcakes had a great taste and were cooked right. Even though it took a lot of time it was worth it.
For the cupcakes you had to start off by making the batter and baking the cupcakes. Then once they were fully baked you had to let them cool all the way. After that you have to cut a hole in the middle of the cupcakes. After you cut the hole in the cupcake you fill the hole with a chocolate sauce and let it cool. Next you make the icing which is made with caramel, then you would ice the cupcakes. I am really proud at the way that these cupcakes came out. I cant wait to see how the rest of my cupcakes come out, I hope they are this good! |
